Cowboy Cookies

Ingredients

  • 2 cups flour
  • 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup butter
  • 1/2 cup vegetable oil
  • 1 cup backed light brown sugar
  • 1 cup white sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 cups quick cooking oats
  • 1 cup semi-sweet chocolate chips or other mix-ins

Directions

  1. Preheat oven to 350 F
  2. Mix flour, baking powder, baking soda, and salt together, set aside
  3. Cream butter, oil, and sugars together until light and fluffy
  4. Add eggs and vanilla and cream again
  5. Add oats and flour mixture, mix until almost combined
  6. Add mix-ins, mix until just combined
  7. Drop by spoonfuls onto un-greased baking sheet, bake 10-12 minutes
