Ingredients
- 1/2lb sliced bacon
- 1/2 cup of chopped onion
- 1/2 cup chopped green pepper
- 12 eggs
- 1 cup milk
- 1 package (16 oz) frozen hash brown potatoes thawed.
- 1 cup (4 oz) shredded cheddar cheese
- 1 tsp salt
- 1/2 tsp pepper
- 1/4 tsp dill weed
Directions
- In a large skillet, cook bacon over medium heat until crispy.
- Remove to paper towel lined plate to drain.
- Reserving 2 tbsp of drippings, crumble bacon and set aside.
- In the same skillet, saute onion and green pper in drippings until tender. Remove with a slotted spoon.
- In a large bowl whisk the eggs and milk. Stir in hashbrowns, cheese, salt, pepper, dill, and onion. Add reserved bacon.
- Transfer to a greased 13" x 9" x 2" baking dish. Bake covered @ 350 for 35 to 45 minutes or until a knife inserted near center comes out clean.
